Leftover Strawberries + Cream Cheesecake Jars

So, it always makes me feel slightly inadequate when there are women who can make just about anything out of leftovers. How is it done and how clever are they? But I do have one thought if they are such clever cooks, why are there leftovers in the first place?! But again it's having the imagination to try and fingers crossed it comes out edible and everyone enjoys it and you are proud of yourself for pulling it off. Now I'm hoping for one of those days.

Truth is we do all have something in the cupboard or the fridge that will just shrivel and get thrown out from time to time. The fruit we buy to add to our cereal but can't always be bothered to prepare first thing in the morning when we might be pushed for time etc. Anyway here's a little taste of something yummy just to get your taste buds thinking.... Strawberries and cream cheesecake jars.

Ingredients.
400g Strawberries
200g digestive biscuits
200g soft cheese
300ml double cream
4 tbsp caster sugar
1 tbsp water

Method.
1 - Place the digestive biscuits in a sandwich bag and beat with a rolling pin to make crumbs.
2 - Distribute the crumbs between jars to form a Base. 
3 - Roughly chop or slice the Strawberries (saving a few to decorate) and place on a low heat with 1 tbsp of the caster sugar and 1 tbsp of water.  Cook until the Strawberries start to soften.
4 - Place the strawberry mix in the fridge to cool while you make the cheesecake filling mixture.
5 - Whisk the double cream with the remaining caster sugar and cream cheese until it has thickened enough to hold a soft peak.
6 - Spoon the cheesecake filling mixture evenly on the biscuit crumbs in the jars.
7 - When the Strawberries have cooled place them evenly across the jars and top with the remaining Strawberries for decoration.

Easy, eh? Looks like you've spent ages preparing it too. A nice summer dessert treat. Enjoy!
